Salad of raw meat

Ingredients (Yield: 4 servings)

- 600 g. lean beef
- 1 yolk (optional)
- 1 dl. Extra virgin olive oil (circa)
- 1 lemon
- 2-3 cloves garlic
- salt and pepper
   
1) Slice the meat and mince with a sharp knife
2) Mix oil, salt, pepper, minced garlic and, optional, yolk, and season the meat. Let stand for at least on hour. Before serving, add lemon juice and mix well
3) Arrange meat on a plate ad decorate with cloves of lemon and lettuce. From October to December shave some white truffle on the meat..
